Whatever Restaurant person did is wrong, talk to Owner. Normally when they charge credit card and bring credit card receipt, the columns of Tip and Total comes blank. You have to fill the same, may be tip Nil but Total is must. Seems to be in your case you did not bother and waiter fill the amount, which is acceptable in this industry. But still you can dispute and inform your credit card company, they will not pay the bill. You never commented about the food which is purely chef's area nothing to do waitstaff.
